Anandtech takes a look inside a Mac Pro.
It seems Apple has a custom deal with Intel to have Core i7 processors without the IHS shipped to them. This allows Apple to shave anywhere from 1-5ÂșC from the temperature of the processors, as the IHS is an hindrance to good cooling, just thrown there to avoid cracked cores when mounting heatsinks (a very rare ocurrence, IMHO).
The heatsinks can be mounted on upgraded Xeons with IHS but it must be done very carefully to avoid damaging both the CPU and the motherboard, as has happenned to Anand.
